Neglected Banana - Banana Bread

If your house is anything like mine, you always have some type of fruit wasting away on the counter or in the fridge. I got tired of throwing fruit away when it isn't "pretty" anymore, so I started cooking with it. The easiest is banana bread. It's one of those recipes where "anything close" measurement-wise works.

  • 3 or 4 bananas (mashed)
  • 2 cups flour
  • 1 & 1/2 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 to one cup sugar
  • 1/2 cup shortening
  • 3 eggs

Preheat oven to 350. Mash your bananas in a large bowl and add all remaining ingredients. Mix well and pour into a greased (or sprayed) baking dish. bake at 350 for 55 - 60 minutes. It's done when inserted knife comes out clean.
