New Year's Eve Spinach Artichoke Dip

This is a recipe that I have made for years, and I get so many requests for it! It's rich, cheesey and delicious! You can make this ahead of time too, just pop in the oven when ready to serve! It makes a great recipe, that transports well to take to a New Years Party. I like to use only REAL mayonnaise (NOT miracle whip) it gives it a much better flavor.


1 14 oz. can Artichoke hearts, drained and chopped

1 10 oz. package of frozen chopped spinach, thawed and drained well

3/4 cup grated parmesan cheese

1 cup mayonnaise

1 1/2 cups shredded Italian blend cheese- reserve 1/2 cup for the topping

1/2 teaspoon garlic powder

1/2 teaspoon white pepper

Combine all ingredients in a medium bowl reserving 1/2 cup of Italian blend cheese for the topping, then transfer to a lightly greased 9 inch pie plate or quiche dish, top with remaining Italian blend cheese. Bake 30 minutes at 350. Serve with tortilla chips or your favorite crackers.
